Description

  • ½ tsp cumin

  • ½ lime, juiced

Instructions

Step 1: Marinate the Chicken

In a bowl, mix olive oil, lime juice, lime zest, garlic, cumin, smoked paprika, salt, and black pepper. Add the chicken, making sure it’s coated well. Cover and let it marinate in the fridge for at least 20 minutes (or up to 24 hours for max flavor).

Step 2: Cook the Chicken

Heat a large skillet over medium-high heat. Add a little olive oil, then cook the chicken for about 6–7 minutes per side (or until internal temp hits 165°F). Let it rest for 5 minutes before slicing.

Step 3: Make the Cauliflower Rice

  • If using a whole cauliflower, pulse it in a food processor until it looks like rice.
  • Heat a large skillet over medium heat. Add olive oil, then cook the onion for about 3 minutes. Add the garlic and cook for another minute.
  • Toss in the cauliflower rice, salt, black pepper, cumin, and chili powder. Sauté for about 5 minutes until softened but not mushy.
  • Turn off the heat, stir in the lime juice and cilantro.

Step 4: Assemble & Serve

Spoon the cauliflower rice onto a plate, top with sliced lime chicken, and load up on your favorite toppings. Extra squeeze of lime? Always a good idea.
