Description

A make-ahead beef burrito recipe with seasoned ground beef, black beans, and melty cheese—perfect for busy weeknights!


Ingredients

For the beef filling:

  • 1 lb ground beef (preferably grass-fed)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp oregano
  • ½ cup tomato sauce
  • ½ cup beef broth

For the burritos:

  • 2 cups cooked rice (white or brown)
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 ½ cups shredded cheddar cheese (or Monterey Jack)
  • ½ cup sour cream (optional)
  • 1 cup salsa
  • 8 large flour tortillas

For freezing & reheating:

  • Parchment paper or foil
  • Resealable freezer bags

Instructions

Cook the beef filling

  1. Heat olive oil in a skillet over medium heat. Add the diced onion and cook until soft, about 3 minutes.
  2. Stir in the garlic and cook for another 30 seconds.
  3. Add the ground beef and break it up with a spoon. Cook until browned.
  4. Season with salt, pepper, cumin, chili powder, smoked paprika, and oregano. Stir well.
  5. Pour in the tomato sauce and beef broth. Let simmer for about 5 minutes, until slightly thickened.
  6. Remove from heat and let cool slightly.

2. Assemble the burritos

  1. Lay out a tortilla and spread a few spoonfuls of rice in the center.
  2. Add about ¼ cup of the beef mixture.
  3. Sprinkle on some black beans, cheese, and a spoonful of salsa.
  4. If using, add a small dollop of sour cream.
  5. Fold in the sides of the tortilla, then roll it up tightly.

3. Freeze for later

  1. Wrap each burrito individually in parchment paper or foil.
  2. Place them in a resealable freezer bag and remove as much air as possible.
  3. Label the bag with the date. They’ll stay fresh in the freezer for up to 3 months.

4. Reheat when ready

  • Oven: Bake at 375°F for 25 minutes if frozen (15 minutes if thawed).
  • Microwave: Wrap in a damp paper towel and heat for 2–3 minutes.
