Description

For the Meatloaf:

  • 1 ½ lbs ground beef (80/20 for best flavor)
  • ½ cup plain breadcrumbs
  • ½ cup whole milk
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 egg
  • ¼ cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried oregano
  • ½ tsp smoked paprika (optional)
  • ½ tsp mustard powder

For the Glaze:

  • ½ cup ketchup
  • 1 tbsp brown sugar
  • 1 tbsp apple cider vinegar

For the Mashed Potatoes:

  • 2 lbs russet potatoes, peeled and cubed
  • 4 tbsp unsalted butter
  • ½ cup whole milk (or heavy cream for extra richness)
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • ¼ tsp garlic powder (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. Mix the breadcrumbs and milk in a small bowl. Let it sit for 5 minutes—this keeps the meatloaf moist.
  3. In a large bowl, combine the ground beef, soaked breadcrumbs, onion, garlic, egg, ketchup, Worcestershire sauce, salt, pepper, oregano, paprika, and mustard powder. Mix gently with your hands or a spoon—don’t overwork it, or the meatloaf will be dense.
  4. Shape into a loaf and place it on the prepared baking sheet (or in the loaf pan).
  5. Mix glaze ingredients in a small bowl and spread half over the top of the meatloaf.
  6. Bake for 40 minutes. Then, spread the remaining glaze over the top and bake for another 15–20 minutes, or until the internal temperature reaches 160°F.
  7. Rest for 5–10 minutes before slicing to keep it juicy.

Notes
